These pole things are actually huge umbrellas according to our guide. Sometimes there are so many people wanting to pray at the mosque that the whole square outside fills up. They put these up to provide shade and shelter (in the unlikely event of rain). It seems just plausible, although I still think she was maybe pulling my leg.
